Broad bean salad with goats cheese

Cooking time: 20 min


  • 1 goats cheese log shaped
  • 1 cos lettuce finely sliced
  • 600 g broad beans fresh or frozen
  • Vinaigrette made with balsamic vinegar


  1. Boil a pan of water add the beans and leave to cook for about 5 mins until they are tender then drain
  2. Cut the goats cheese into 1cm slices and place on a baking tray lined with foil
  3. Make the vinaigrette
  4. Light the grill and put the tray of goats cheese under it until it's slightly melted and browned then remove from the heat
  5. To serve put the lettuce on a serving dish cover with the beans and then gently place the cheese on top — pour over the vinaigrette.
