Lettuce and Pea Soup
For 2 people. Cooking time: 20 min.
Ingredients
- Medium onion, chopped
- A little butter & olive oil
- 1 large cos & 4 baby gems
- 250g frozen peas
- 1L vegetable stock
- 3-4 sprigs fresh thyme
- Salt and pepper
- Crème fraiche
Method
- Sweat the onion in the oil and butter until soft, then add the peas and lettuce. Pour over the stock, and add 2 sprigs of thyme, bring to the boil and simmer gently for 4-6 minutes until the peas are tender.
- Remove from the heat and then blend the soup in a liquidiser.
- Check the seasoning.
- To serve re — heat and add a dollop of crème fraiche and the remaining thyme leaves as a garnish.
